I’ve mentioned before how meal prepping gets my family through weeknights (and packing for lunch). You don’t have to cover every single meal but if you can take care of few days, life is that much easier! Just remember to keep things basic. After all, working mamas are limited on time.
One of the quick dishes I made for this week was a chicken and broccoli bowl with Korean sweet potato noodles. You can find them at specialty stores or, like everything else in the world…on Amazon!
I got all my other groceries using Instacart. My in-laws were in town and I had no time to go to the store. So I decided to give the service a try. OK, now let me get to the point. Here is what I threw together in the simplest terms possible (because I’m not a cook and I don’t know the lingo):
Ingredients:
4 boneless, skinless chicken breasts
1 head of broccoli
1/2 package of Korean sweet potato noodles
Coconut Aminos Garlic Sauce (Coconut Secret brand)
Teriyaki sauce (Coconut Secret makes one you can thicken with arrowroot powder for a Paleo version)
Toasted Sesame Oil
Sesame Seeds
Salt & Pepper
What to do:
Put chicken in slow cooker and pour teriyaki sauce on top. Heat on low for about 4 hours. Circle back later to make the noodles. Follow package instructions. While the noodles cook, cut broccoli and spread the pieces out on a baking tray. Drizzle lightly with sesame oil and sprinkle on salt and pepper. Roast in the oven at 400 degrees for 15-20 minutes. Meanwhile, transfer noodles to large bowl and coat well with Coconut Aminos sauce. Divide the noodles into your meal prep containers. Cut up the chicken and do the same (drizzle with more teriyaki for extra flavor). Add broccoli once it cools a bit. Finally, act fancy and sprinkle with sesame seeds before putting on the lids and stacking in the frig! Be sure to go back and splash noodles with some more Coconut Aminos right before you eat them… otherwise they will be too sticky! Also, the noodles don’t reheat well so we eat this cold.
